Recipes
Some say I’m a harsh critic, but when it comes to my own cooking I am a lot like Jamie Oliver. I don’t cut things into perfect little cubes and rarely work with recipes. I might use a rice cooker to create some Mulled Wine, or not wash my home grown herbs when I chuck them in the pan. I recommend the Queen Victorian Market for all food.
My simple recipes:
SALMON WITH BURNT BUTTER & SPRING ONIONS
Firstly, cut your salmon into the desired size and rub sea salt on the skin side. Grab some olive oil and heat it in the pan until hot, then place the salmon in skin side up for 3-4 minutes. Get some butter and spread it on the skin and turn over, cook for another 3-4 mins. In the last 2 minutes chuck in half a handful of fine cut spring onions.
PAN FRIED SALMON ON A BED OF SPRING ONIONS & CHERRY TOMATOES
Firstly, cut your salmon into the desired size and rub sea salt on the skin side. Grab some olive oil and heat this in the pan until hot, then place the salmon in skin side up for 3-4 minutes. Turn over, cook for another 3-4 mins. In the last 2 minutes chuck in half a handful of fine cut spring onions and cherry tomatoes. Squeeze some fresh lemon juice over to serve.
SPINACH & PUMPKIN LENTIL SALAD WITH GOATS CHEESE
Drizzle some olive oil over small cubes of pumpkin and bake in 180degree oven for 20-30 mins.
Mix some smoked paprika, olive oil and apple cider vinegar in a small bowl to form a paste.
Toss together two cans of drained brown lentils, 1/2 cup fresh continental parsley, a handful of fresh baby spinach and the pumpkin
Drizzle the paprika dressing over the top, with a squeeze of fresh lemon.
APPLE & MAPLE HALOUMI SALAD WITH QUINOA
A friend sent me this recipe & I replaced the pork with haloumi.
